How to make it

Fill a medium pot halfway with water; bring to a boil. Rinse and dry all produce. Finely chop the ginger to get 1 teaspoon. Stem the jalapeno and thinly slice into rounds (for milder, halve lengthwise and remove the ribs and seeds). Wash hands, knife, and board immediately after. In a bowl, whisk together the tomato paste, hoisin sauce, sesame oil, sugar, and soy sauce until the sugar dissolves.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the shishito peppers in an even layer. Cook undisturbed 3-4 minutes until lightly browned; season. Continue stirring occasionally 4-5 minutes until charred and softened. Remove from heat; stir in the ponzu sauce. Transfer to a plate and cover with foil. Wipe out the pan.

Heat a drizzle of olive oil in the same pan over medium-high. Add the ginger; season. Cook stirring frequently 1-2 minutes until slightly softened. Add the pork; season. Cook stirring frequently, breaking the meat apart, 5-6 minutes until lightly browned. Add the sauce; season. Cook stirring frequently 2-3 minutes until the sauce thickens and the pork is cooked through. Taste and season.

Rest a strainer over the pot of boiling water (water should not touch the strainer bottom). Add the buns in batches; cover with the pot lid. Steam 3-5 minutes per batch until puffy and softened. Transfer to a board.
