1 each Poblano Pepper
2 each Scallions
1 each Red Onion
4 oz Grape Tomatoes
1 tbsp Light Brown Sugar
2 tbsp Grated Cotija Cheese
¼ cup Sour Cream
¼ cup Guacamole
2 tsp Chipotle Chile Paste
How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Drain and rinse the beans. Halve the tomatoes. Halve, peel, and medium dice the onions. Stem the peppers, halve lengthwise, seed, and medium dice. Wash hands, knife, and board thoroughly after handling. In a bowl, mix the guacamole with 1 tablespoon sour cream (2 tbsp for 4 servings); season with salt and pepper.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the white scallion bases, season, and cook stirring constantly 30 seconds to 1 minute until slightly softened. Add the drained beans and 1/4 cup water (1/2 cup for 4 servings), season again, and mash with a potato masher while stirring 4-5 minutes until slightly thickened. Transfer to a bowl, stir in the remaining sour cream, and taste for seasoning. Cover with foil. Wipe out the pan.

Lay the tortillas on a sheet pan and prick all over with a fork to prevent bubbling. Drizzle with olive oil, season with salt and pepper, and turn to coat. Arrange (overlapping is fine) and toast in the oven 4-6 minutes until lightly browned and crisp.

Remove from heat and taste for seasoning.

Layer the tostadas with the mashed beans, cooked sausage, and chipotle vegetables. Top with the creamy guacamole, a sprinkle of cotija, and the green scallion tops.
