How to make it
1
Preheat the oven to 400°F. Rinse and dry all produce. Peel and mince the garlic and ginger. Roughly chop the mint and cilantro. If you like spicy food, stem and thinly slice the birdseye chili (wash hands immediately after). Peel and large dice the cucumber. Peel and slice the red onion. Cut the chicken into 1-inch chunks.
2
In a bowl, combine the mint, cucumber, lemon juice, half the cilantro, and half the sliced red onion. Add as many chili slices as you like. Drizzle with olive oil, season, and toss.
3
Heat a drizzle of oil in a large pan over medium-high. Add the chicken; season. Cook stirring occasionally 2-3 minutes until browned on the outside.
4
Add the garlic and ginger; cook stirring about 1 minute until fragrant. Add the tikka masala spices and diced tomatoes; season. Simmer stirring 2-3 minutes until slightly thickened. Stir in the half-and-half and simmer 2-3 minutes until the chicken is cooked through. USDA minimum: 165°F for chicken.
5
Place the naan on a baking sheet or directly on the oven rack. Heat in the oven 2-3 minutes until warmed through and soft.
6
Divide the chicken tikka masala and cucumber salad between 2 plates. Garnish with the remaining cilantro. Serve with the warm naan.
