How to make it

Take the noodles out of the refrigerator. Rinse and dry all produce. Cut the mushrooms into bite-sized pieces. In a bowl, combine the soy glaze, soy sauce, vinegar, 1/4 cup water, and up to half the chili crisp to taste.

Heat a drizzle of olive oil in a large pan over medium-high. Add the pork and sauteed aromatics (it may spatter); season with salt and pepper. Cook stirring frequently, breaking the meat apart, 4-5 minutes until lightly browned. Add the mushrooms; season if desired. Cook stirring occasionally 3-4 minutes until softened and the pork is cooked through.

Separate the noodles by hand. Add the noodles, spinach, and sauce (it may spatter) to the pan. Cook stirring frequently 1-2 minutes until thoroughly combined and the noodles are heated through. Remove from heat. Taste and season. Serve topped with as much remaining chili crisp as you like.
