4 oz Grape Tomatoes
1 each Shallot
3 tbsp Roasted Garlic Pesto
1 Β½ tsp Calabrian Chile Paste

How to make it

Rinse and dry all produce. Halve the tomatoes. Halve, peel, and thinly slice the shallot(s).

Heat a drizzle of olive oil in a large high-sided pan over medium-high. Add the corn, tomatoes, and shallot(s); season. Cook stirring occasionally and pressing the tomatoes 2-3 minutes until slightly softened. Add the cream (shake the packet), garlic pesto, and as much chile paste as you like. Cook stirring frequently 1-2 minutes until combined.

Add the pasta and 1/4 cup water (1/2 cup for 4 servings). Cook stirring frequently 1-2 minutes until combined and the pasta is heated through. Remove from heat. Serve topped with parmesan.
