Take the dough out of the refrigerator. Preheat the oven to 475°F. Rinse and dry all produce. Peel and roughly chop the garlic. Drain the tomatoes; discard the liquid. Peel and thinly slice the onion. Remove the stem, ribs, and seeds from the bell pepper; medium dice. Tear the cheese into bite-sized pieces.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the pork and as much spice blend as you like; season. Cook breaking the meat apart frequently 3-5 minutes until browned. Add the garlic and stir constantly 30 seconds to 1 minute until fragrant. Transfer to a plate; drain drippings from the pan. Return the pork to the pan, add the tomatoes, and season. Cook stirring occasionally and gently smashing the tomatoes 2-4 minutes until slightly thickened. Transfer to a plate. Wipe out the pan.

Heat a drizzle of olive oil in the same pan over medium-high. Add the onion; season. Cook stirring occasionally 2-3 minutes until slightly softened. Add the bell pepper; season. Cook stirring occasionally 3-4 minutes until softened. Taste and season.

Lightly oil a sheet pan. Stretch the dough by hand to 1/4-inch thick on a clean surface, rest 5 minutes if it springs back. Transfer to the pan and press into the corners to coat the bottom in oil. Leaving a 1-inch border, top evenly with the cooked pork, cooked onion and pepper, and cheese.

Bake, rotating halfway through, 17-19 minutes until the crust is golden. Let stand 2 minutes.

Transfer to a cutting board and cut into 6 equal pieces. Serve 2/3 of the pizza between 2 dishes.
