⅓ cup Kimchi
2 each Scallions
¼ cup Cornstarch

1 tbsp Mirin (salted cooking wine)
1 each Persian Cucumbers
2 tbsp Soy Glaze
1 tsp Black & White Sesame Seeds
How to make it

Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff and cover to keep warm.

Rinse and dry all produce. Halve the radishes lengthwise and thinly slice. Halve the cucumbers lengthwise and thinly slice. Slice the scallions, keeping the white bases and green tops separate. In a bowl, combine the sliced radishes, cucumbers, white scallion bases, mirin, and kimchi; season and stir. Set aside to marinate at least 10 minutes. In a separate bowl, whisk together the mayonnaise, soy glaze, and as much gochujang as you like.

When a pinch of cornstarch sizzles immediately, add the coated chicken in an even layer (discard excess starch). Cook undisturbed 3-4 minutes until lightly browned. Continue stirring frequently 3-4 minutes until browned and cooked through. USDA minimum: 165°F for chicken.

Discard pan oil and transfer the chicken to the bowl of sauce; stir to coat. Taste and season. Serve the rice topped with the marinated vegetables (including any liquid) and dressed chicken. Top with sesame seeds and the green scallion tops.
