1 tbsp White Wine Vinegar
How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Add the eggs and cook 7 minutes for soft-boiled or to your desired doneness. Transfer to a strainer with a slotted spoon and rinse under cold water 30-60 seconds (keep the water boiling). Peel when cool enough. Season with salt and pepper.

Rinse and dry all produce. Core and thinly slice the cabbage. Remove the pepper stems and cores; thinly slice lengthwise. Combine the cabbage and peppers in a bowl. Roughly chop the noodles. In a separate bowl, combine the sesame oil, black bean sauce, and vinegar.

Heat the sauteed aromatics in a large pan over medium-high. Add the sliced cabbage and peppers; season. Cook stirring occasionally 3-5 minutes until softened. Add the sauce. Cook stirring frequently 1-2 minutes until combined. Transfer to a bowl; taste and season. Cover with foil. Wipe out the pan.

Add the chopped noodles to the boiling water. Cook stirring occasionally 2-3 minutes until tender. Drain and rinse under warm water 30-60 seconds. Drain at least 2 minutes to remove excess water.

Heat 1 tablespoon olive oil in the same pan over medium-high. Add the drained noodles (the oil may spatter) and spread in an even layer. Cook undisturbed 4-5 minutes until lightly browned and crispy. Remove from heat. Add the soy sauce; stir and scrape up any browned noodles until coated. Serve topped with the cooked vegetables and seasoned eggs.
