10 oz Baby Bok Choy
2 each Scallions
1 cup Panko Breadcrumbs
2 tbsp All-Purpose Flour
3 tbsp Sweet Chili Sauce
1 tbsp Soy Sauce
2 tbsp Mayonnaise
How to make it

Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed and tender. Fluff with a fork and cover to keep warm.

Rinse and dry all produce. Trim the bok choy root ends and roughly chop. Slice the scallions, keeping the white bases and green tops separate. In a bowl, combine the sweet chili sauce and mayonnaise.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the white scallion bases. Cook stirring occasionally 1-2 minutes until slightly softened. Add the bok choy; season with salt and pepper. Cook stirring occasionally 2-3 minutes until softened. Add the soy sauce (it may spatter) and stir occasionally 1-2 minutes until combined. Transfer to a bowl and cover with foil. Wipe out the pan.

Pat the chicken dry and place in a bowl; season with salt and pepper. Coat in the panko breadcrumbs, pressing to adhere. Heat a thin layer of oil in the same pan over medium-high. When the oil is hot, add the coated chicken in an even layer. Cook 4-6 minutes per side until golden and cooked through, adding oil before flipping if dry. Transfer to a paper towel-lined plate. USDA minimum: 165ยฐF for chicken.

Stir the cooked bok choy into the cooked rice. Taste and season. Thinly slice the chicken crosswise. Serve the rice topped with the sliced chicken. Drizzle with the sweet chili mayo and finish with the green scallion tops.
