¼ cup Grated Parmesan Cheese
2 tbsp Crème Fraîche

How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Snap the woody ends off the asparagus and cut into 1-inch pieces. Halve the lemon(s) and squeeze the juice into a bowl. Remove the plastic liner from the prosciutto, stack, and thinly slice crosswise.

Add the pasta to the boiling water. Cook stirring occasionally 8-10 minutes until al dente. Drain, reserving 1/2 cup pasta water (1 cup for 4 servings).

Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the sliced prosciutto. Cook stirring frequently, breaking apart clumps, 4-5 minutes until crispy. Transfer to a paper towel-lined plate, leaving the fond.

Add the cooked pasta and half the reserved pasta water to the pan (it may spatter). Cook stirring constantly 1-2 minutes until combined and the liquid has reduced. Remove from heat. Stir in the pesto, creme fraiche, and as much lemon juice as you like until coated, adding more water gradually if needed. Taste and season. Serve topped with the crispy prosciutto and parmesan.
