How to make it

Take the dough out of the refrigerator. Position a rack in the center of the oven and heat to 475°F. Rinse and dry all produce. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Halve the tomatoes. Halve the onion(s); peel and small dice 1 half. Thinly slice the chives. In a bowl, combine the bechamel, garlic, crumbled goat cheese, torn mozzarella, and as much red pepper flake as you like; season and stir.

Lightly oil a sheet pan (or 2 for 4 servings). Stretch the dough to 1/4-inch thick by hand — rest 5 minutes if it springs back. Transfer to the pan; rub to coat the bottom in oil. Prick the surface all over with a fork. Leaving a 1-inch border, top evenly with the cheese mixture. Drizzle with olive oil; season with salt. Bake, rotating halfway through, 17-22 minutes until the cheese is melted and the crust is golden. Let stand 2 minutes.

Add the halved tomatoes, honey, half the vinegar, and 2 tablespoons water (4 tbsp for 4 servings). Cook stirring occasionally and pressing the tomatoes 4-6 minutes until softened and the liquid evaporates. Remove from heat. Top the baked flatbread(s) with the tomato jam and sliced chives. Cut into equal-sized pieces.
