Ingredients
12 oz Boneless, Skinless Chicken Thighs
2 each Pocketless Pitas
2 oz Arugula
4 oz Grape Tomatoes
½ cup Tzatziki (cucumber-yogurt sauce)
½ oz Sweety Drop Peppers
1 ½ tbsp Red Harissa Paste
2 oz Feta Cheese
1 each Single-Use Aluminum Tray
How to make it
1
Preheat the oven to 450°F. Rinse and dry all produce. Pat the chicken dry; season both sides with salt and pepper. Transfer to the tray. Top with the harissa paste. Add the tomatoes; drizzle with olive oil and season. Stir to coat. Bake uncovered 16-20 minutes until the chicken is browned and cooked through. USDA minimum: 165°F for chicken.
2
Once the chicken has been baking about 10 minutes, place the pitas on foil and drizzle with olive oil. Stack, wrap in foil, and place directly on an oven rack. Warm 5-7 minutes until heated through. Carefully unwrap.
3
Toss the arugula in a bowl with a drizzle of olive oil; season. Using 2 forks, shred the baked chicken into bite-sized pieces; stir to combine with the tomatoes. Fill the warmed pitas with the tzatziki, shredded chicken and tomatoes, dressed arugula, crumbled feta, and peppers.
