Position a rack in the center of the oven and heat to 450°F. Rinse and dry the tomatoes. Rinse and drain the rice. Drain and rinse the beans. Lightly oil the tray. Combine the rice, drained beans, tomatillo sauce, tomatoes, and as many peppers as you like (wash hands immediately after). Add 1 cup water. Season and stir thoroughly.

Cover tightly with foil; place directly on an oven rack and bake 38 minutes until the rice is tender and the chicken is cooked through. USDA minimum: 165°F for chicken. Leave the oven on and remove.
