How to make it

Rinse and dry all produce. Finely chop the shallot. Peel and finely chop the ginger. Drain and rinse the chickpeas. Halve the tomatoes.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the shallot and ginger; season with salt and pepper. Cook stirring occasionally 1-2 minutes until slightly softened. Add the curry paste and stir constantly 30 seconds to 1 minute. Add the drained chickpeas; season. Cook stirring frequently 1-2 minutes until combined.

Add the tomato sauce (it may spatter), halved tomatoes, and 1/2 cup water; season with salt and pepper. Cook stirring occasionally 2-3 minutes until the liquid is slightly reduced. Add the spinach and half the cream. Cook stirring frequently 30 seconds to 1 minute until the spinach wilts and everything is combined. Taste and season.

Make 2 shallow wells in the center of the sauce. Crack an egg into each; season with salt and pepper. Loosely cover with foil and cook 4-5 minutes until the whites are set and the yolks reach your desired doneness. Let stand 2 minutes. Serve drizzled with the remaining cream.
