1 each 8-oz can Tomato Sauce
1 each Zucchini
2 clove Garlic
4 oz Fresh Mozzarella Cheese
2 oz Shredded Fontina Cheese
¼ cup Grated Parmesan Cheese
1 tbsp Italian Seasoning (Whole Dried Basil, Sage, Oregano, Savory, Rosemary, Thyme & Marjoram)
¼ tsp Crushed Red Pepper Flakes
1 oz Sliced Roasted Red Peppers
How to make it

Take the dough out of the refrigerator. Preheat the oven to 475°F. Rinse and dry all produce. Quarter the zucchini lengthwise and cut crosswise into 1-inch pieces. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Roughly chop the peppers.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the zucchini in an even layer and cook undisturbed 3-4 minutes until lightly browned. Add half the garlic; season with salt and pepper. Cook stirring frequently 30 seconds to 1 minute until slightly softened. Transfer to a large bowl. Wipe out the pan.

Heat a drizzle of olive oil in the same pan over medium-high. Add the Italian seasoning, remaining garlic, and as much red pepper flake as you like. Cook stirring constantly 30 seconds to 1 minute until fragrant. Add the tomato sauce (it may spatter); season. Cook stirring occasionally 2-4 minutes until slightly thickened. Taste and season. Cover with foil.

Add the chopped peppers, mozzarella (torn into small pieces), fontina, parmesan, and 2 tablespoons of the sauce (4 tbsp for 4 servings) to the bowl of zucchini. Season with salt and pepper and stir to combine.

Line a sheet pan (or 2 for 4 servings) with foil and lightly oil. Divide the dough into 2 equal portions (4 for 4 servings). Stretch each by hand to a 1/4-inch-thick round, rest 5 minutes if it springs back. Transfer to the pan(s). Divide the filling across one half of each round, leaving a 2-inch border at the edges. Fold the dough over the filling and crimp the edges with a fork to seal. Cut 4 angled slits across the top. Drizzle or brush with olive oil.

Bake, rotating the pan(s) halfway through, 14-19 minutes until golden brown. Let stand 2 minutes before serving. Serve with the remaining sauce on the side.
