Take the noodles out of the refrigerator. Rinse and dry all produce. Peel the carrots and thinly slice on an angle. Trim the bok choy root ends, roughly chop, and separate the stems from the leaves. Halve the lime. In a bowl, whisk together the peanut butter spread, black bean-chile sauce, the juice of both lime halves, and 2 tablespoons water.

Heat a large pan over medium-high. Add the pork. Cook stirring frequently, breaking the meat apart, 3-4 minutes until lightly browned.
