2 each Boneless, Center-Cut Pork Chops
12 oz Potatoes
12 oz Carrots
2 each Scallions
½ oz Salted Butter
¼ cup Sour Cream
2 tsp Honey
1 tbsp Hot Sauce
½ tbsp Weeknight Hero Spice Blend (Onion Powder, Garlic Powder, Smoked Paprika & Whole Dried Parsley)
How to make it

Preheat the oven to 450°F. Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Cut the potatoes into a medium dice. Slice the scallions, keeping the white bases and green tops separate. Peel the carrots, halve crosswise, then quarter lengthwise. In a bowl, whisk together the honey, 2 tablespoons water (4 tbsp for 4 servings), and as much hot sauce as you like.

Add the diced potatoes to the boiling water and cook 16-20 minutes until fork-tender. Drain and return to the pot. Add the sour cream and white scallion bases. Mash to your desired consistency with a fork or potato masher. Taste and season with salt and pepper. Cover to keep warm.

Spread the carrot pieces on a sheet pan. Drizzle with olive oil and season with salt, pepper, and half the spice blend; toss to coat in an even layer. Roast 14-18 minutes until lightly browned and fork-tender. Air fryer option: 390°F for 9-12 minutes.

Pat the pork dry and season both sides with salt, pepper, and the remaining spice blend. Heat a drizzle of olive oil in a nonstick pan over medium-high. Cook 4-6 minutes per side for medium (center may be slightly pink), until browned and done to your liking. Transfer to a board, rest 5 minutes, then slice crosswise. USDA minimum: 145°F for pork. Leave the fond in the pan.

Add the sauce to the pan of fond (it may spatter). Cook over medium-high, stirring constantly and scraping up the fond, 1-2 minutes until combined. For thicker sauce cook longer; for thinner add water a tablespoon at a time. Remove from heat and stir in the butter until melted. Taste and season. Plate the sliced pork with the mashed potatoes and roasted carrots. Spoon the sauce over everything and finish with the green scallion tops.
