12 oz Gnocchi
8 oz Brussels Sprouts
1 each Lemon
2 clove Garlic
½ oz Salted Butter
¼ tsp Crushed Red Pepper Flakes
2 tsp Honey
¼ cup Grated Parmesan Cheese
How to make it

Rinse and dry all produce. Remove the plastic liner from the prosciutto, stack the slices, and thinly slice crosswise. Trim and quarter the Brussels sprouts lengthwise. Peel and roughly chop 2 garlic cloves. Quarter and deseed the lemon.

Heat a drizzle of olive oil in a large pan over medium-high. Add the sliced prosciutto. Cook stirring frequently and breaking apart any clumps 2-3 minutes until crispy. Transfer to a paper towel-lined plate, leaving the fond.

Heat 3 tablespoons olive oil in the pan of fond over medium-high. Add the Brussels sprouts in an even layer. Cook undisturbed 3-4 minutes until lightly browned. Add the garlic and as much red pepper flake as you like; season with salt and pepper. Cook stirring frequently 1-2 minutes until softened.

Add the gnocchi and 1/3 cup water (it may spatter). Cook stirring occasionally 2-3 minutes until the water cooks off and the gnocchi are tender. Add the butter and honey; season with salt and pepper. Cook stirring frequently 2-3 minutes until the butter melts and everything is combined. Remove from heat. Stir in the juice of 2 lemon wedges. Taste and season. Serve topped with the crispy prosciutto and parmesan. Offer the remaining lemon wedges on the side.
