10 oz Cooked Pulled Pork
½ cup Long Grain White Rice
4 oz Grape Tomatoes
¼ cup Sour Cream
⅓ cup Guajillo Chile Pepper Sauce
1 oz Tomato & Chipotle Flavored Butter
2 tbsp Raw Pepitas
2 tsp Smoky Honey Habanero Spice Blend (Honey Granules, Brown Sugar, Smoked Paprika, Salt & Habanero Powder)
How to make it

Take the butter out to soften. Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff with a fork.

Rinse and dry all produce. Halve the tomatoes. Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the pepitas; season with salt and pepper. Cook stirring constantly 1-3 minutes until toasted (they may pop). Transfer to a bowl and toss immediately with as much of the spice blend as you like. Wipe out the pan.

Add the pulled pork, halved tomatoes, guajillo sauce (it may spatter), and 2 tablespoons water (4 tbsp for 4 servings); season with salt and pepper. Cook stirring frequently, breaking the meat apart, 2-3 minutes until the tomatoes are slightly softened and the pork is heated through. Remove from heat.

Add the softened butter to the rice; season with salt and pepper. Stir until the butter melts. Serve the rice topped with the cooked pork and tomatoes. Garnish with sour cream and the seasoned pepitas.
