Ingredients
12 oz Boneless, Skinless Chicken Thighs
½ cup Long Grain White Rice
1 tbsp Sweet White Miso Paste
2 tbsp Maple Syrup
3 tbsp East Asian-Style Sautéed Aromatics
1 tsp Black & White Sesame Seeds
1 tbsp Soy Sauce
4 oz Mushrooms
6 oz Green Beans
1 each Single-Use Aluminum Tray
How to make it
1
Position a rack in the center of the oven and heat to 450°F. Rinse and dry all produce. Rinse and drain the rice. Lightly oil the tray. In the tray, combine the rice, sauteed aromatics, soy sauce, mushrooms (torn into bite-sized pieces), and 1 cup water. Stir thoroughly.
2
Pat the chicken dry and season both sides with salt and pepper. Arrange in an even layer on top of the base. Cover tightly with foil and bake 25 minutes. Remove the foil (leave oven on).
3
Meanwhile, snap off any stem ends from the green beans. In a bowl, whisk together the miso paste and maple syrup.
4
Add the green beans to the partially baked base around the chicken in an even layer. Drizzle with olive oil and season with salt and pepper. Spread the miso-maple glaze evenly over the chicken. Return to the oven uncovered 9-12 minutes until the green beans are fork-tender and the chicken is cooked through. USDA minimum: 165°F for chicken. Serve topped with sesame seeds.
