In the tray, combine the rice, drained beans, tomatillo sauce, tomatoes, and as many peppers as you like (wash hands immediately after). Add 1 cup water. Season and stir thoroughly.

Pat the chicken dry and season both sides with salt, pepper, and enough spice blend to coat. Arrange in an even layer on top of the base. Cover tightly with foil and bake 39-41 minutes until the rice is tender and the chicken is cooked through. USDA minimum: 165°F for chicken. Leave the oven on and remove.

Remove the foil. Top evenly with the cheese. Return to the oven uncovered 5-7 minutes until the cheese is melted.
