Position a rack in the center of the oven and heat to 450ยฐF. Rinse and dry all produce. Rinse and drain the rice. Between two trays, divide the spinach, rice, tomatillo sauce, tomatoes, raisins, and spice blend. Stir to combine. Add 1 cup water per tray, season with salt and pepper, and stir thoroughly.

Tear the chorizo into bite-sized pieces and arrange in an even layer on each tray. Cover tightly with foil and bake 39-41 minutes until the rice is tender and the chorizo is cooked through. Leave the oven on and remove.

Remove the foil. Top evenly with the cheese. Return to the oven uncovered 5-7 minutes until the cheese is melted. Serve topped with sour cream.
