Set the oven to 450Β°F. Rinse and dry all produce. In the baking tray, combine the spinach, gnocchi, pesto, mascarpone, tomatoes, and as much red pepper flake as you like. Stir well, add 2 tablespoons of water per tray, season with salt and pepper, and stir again to combine thoroughly.

Tear the sausage into bite-sized pieces and distribute over the top. Cover tightly with foil and bake 30 minutes. Uncover, tear the mozzarella over the top, and return to the oven uncovered for 4-6 minutes until the cheese is melted and the sausage is cooked through. Let stand 3 minutes, then serve with parmesan on top.
