How to make it

Rinse and dry all produce. Stem the peppers, halve lengthwise, seed, and thinly slice crosswise.

Heat a drizzle of olive oil in a large high-sided pan over medium-high. Add the sausage and break it apart. Cook undisturbed 4-5 minutes until lightly browned. Drain off excess oil. Add the sliced peppers; season. Cook stirring occasionally 3-4 minutes until the pepper is slightly softened and the sausage is cooked through.

Add the tomato paste and stir constantly 30 seconds to 1 minute until combined. Add the tortellini, spinach, cream (shake the packet), romesco sauce, and 1 cup water (2 cups for 4 servings); season. Cook stirring frequently 4-5 minutes until combined, the spinach is wilted, and the tortellini are heated through. Remove from heat. Serve topped with parmesan.
