Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Finely chop the almonds. Thinly slice the mushrooms. Halve the tomatoes.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the chopped almonds and breadcrumbs; season with salt and pepper. Cook stirring frequently 2-3 minutes until lightly browned and toasted. Transfer to a plate. Wipe out the pan.
