Rinse and drain the rice. Combine with a big pinch of salt and 1 1/4 cups water (2 1/2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 23-25 minutes until absorbed. Fluff with a fork.

Rinse and dry all produce. Cut the mushrooms into bite-sized pieces. Separate the lettuce leaves. In a bowl, whisk together the hoisin sauce, 2 teaspoons water (4 tsp for 4 servings), and up to half the chili crisp.

Heat the sauteed aromatics in a nonstick pan over medium-high. Add the pork; season. Cook stirring frequently, breaking the meat apart, 3-4 minutes until lightly browned. Add the mushrooms; season. Cook stirring occasionally 3-4 minutes until softened. Add the sauce (it may spatter). Cook stirring frequently 1-2 minutes until the pork is coated and cooked through. Serve the lettuce leaves, cooked rice, and cooked pork and mushrooms separately. Fill each cup using 1 lettuce leaf. Drizzle with the dressing. Top with peanuts and as much remaining chili crisp as you like.
