½ cup Semi-Pearled Farro
8 oz Brussels Sprouts
1 each Red Onion
½ oz Sweety Drop Peppers
1 oz Goat Cheese
2 tbsp Balsamic Vinegar
1 tbsp Soy Sauce
1 tbsp Light Brown Sugar
½ tbsp Weeknight Hero Spice Blend (Onion Powder, Garlic Powder, Smoked Paprika & Whole Dried Parsley)
How to make it

Preheat the oven to 450°F. Bring a medium pot of salted water (3/4 full) to a boil. Line a sheet pan with foil. Pat the pork dry and season with salt, pepper, and the spice blend; turn to coat. Heat a drizzle of olive oil in a nonstick pan over medium-high. Cook the pork turning occasionally 4-6 minutes until browned on all sides. Transfer to one side of the sheet pan. Roast 10 minutes. Leave the fond in the pan. Remove from the oven (leave oven on).

Rinse and dry all produce. Trim and halve the Brussels sprouts lengthwise. Halve and peel the onion(s); thinly slice one half and small dice the other to get 2 tablespoons (4 tbsp for 4 servings). Combine the Brussels sprouts and sliced onion in a bowl; drizzle with olive oil, season, and toss. Roughly chop the peppers. In a bowl, combine the vinegar, soy sauce, sugar, and 2 tablespoons water (4 tbsp for 4 servings); season.

Spread the seasoned vegetables on the other side of the sheet pan. Return to the oven and roast 15-17 minutes for medium (center may be slightly pink) or to your desired doneness until the vegetables are fork-tender. USDA minimum: 145°F for pork. Transfer the pork to a board and rest 5 minutes.

Add the farro to the boiling water. Cook uncovered 18-20 minutes until tender. Drain and return to the pot.

Heat a drizzle of olive oil in the pan of fond over medium-high. Add the diced onion; season. Cook stirring frequently 1-2 minutes until softened. Add the sauce (it may spatter). Cook stirring frequently and scraping up the fond 2-3 minutes until slightly thickened. For thicker cook longer; for thinner add water 1 tablespoon at a time. Taste and season.

Add the roasted vegetables, chopped peppers, and a drizzle of olive oil to the farro; season and stir. Slice the pork crosswise against the grain. Serve the finished farro topped with crumbled goat cheese, sliced pork, and the finished sauce.
