Take the dough out of the refrigerator. Preheat the oven to 450°F. Rinse and dry all produce. Thinly slice the mozzarella. Roughly chop the peppers. Halve the tomatoes.

Lightly oil a sheet pan (or 2 for 4 servings). Divide the dough into 2 equal portions (4 for 4 servings). Stretch each by hand to 1/4-inch thick — rest 5 minutes if it springs back. Transfer to the oiled pan(s). Drizzle or brush the tops with olive oil, then fold each in half. Bake 8-12 minutes until lightly browned. Let stand 2 minutes.
