2 each Scallions
1 tbsp Sesame Oil
1 tbsp Sambal Oelek
2 tbsp Soy Glaze
1 tsp Black & White Sesame Seeds
How to make it

Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Peel the carrots and thinly slice on an angle. Trim the bok choy root ends and roughly chop.

Rinse and drain the rice. Heat a drizzle of olive oil in a small pot over medium-high. Add the white scallion bases; season. Cook stirring constantly 30 seconds to 1 minute until slightly softened. Add the rice and 1 cup water (it may spatter). Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff. Add the green scallion tops and stir.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the carrots; season. Cook stirring occasionally 2-3 minutes until slightly softened. Add the bok choy; season. Cook stirring frequently 3-4 minutes until softened. Transfer to a bowl and cover with foil. Wipe out the pan.
