10 oz Shrimp (peeled & deveined)
½ lb Lo Mein Noodles
6 oz Carrots
10 oz Baby Bok Choy
2 each Scallions
2 tbsp Soy Glaze
1 tbsp Sambal Oelek
1 tbsp Sesame Oil
2 tbsp Hoisin Sauce
1 tbsp Rice Vinegar
How to make it

Bring a medium pot of water (3/4 full) to a boil. Rinse and dry all produce. Trim the bok choy root ends; thinly slice crosswise, separating the stems and leaves. Peel the carrots; halve lengthwise and thinly slice crosswise. Slice the scallions, keeping the white bases and green tops separate. Pat the shrimp dry; season if desired. In a bowl, whisk together the hoisin sauce, sesame oil, soy glaze, vinegar, 2 tablespoons water, and as much sambal oelek as you like.

Add the noodles to the boiling water, stirring to separate. Cook stirring occasionally 2-4 minutes until tender. Drain and rinse under warm water 30-60 seconds.

Heat a drizzle of olive oil in a large pan over medium-high. Add the carrots and bok choy stems. Cook stirring occasionally 3-4 minutes until lightly browned.

Push the vegetables to one side. Add the shrimp and white scallion bases to the other side in an even layer. Cook undisturbed 2-3 minutes until the shrimp are slightly opaque. Continue stirring frequently 1-2 minutes until the vegetables are softened and the shrimp are cooked through. Add the bok choy leaves, cooked noodles, and sauce (it may spatter). Cook stirring constantly 30 seconds to 1 minute until combined and the noodles are coated. Taste and season. Serve topped with the green scallion tops.
