2 tbsp Verjus Rouge

How to make it

Bring a medium pot of salted water to a boil. Add the rice and cook uncovered 17-19 minutes until tender. Drain and return to the pot.

Rinse and dry all produce. Remove the stems and cores from the sweet peppers; halve lengthwise and thinly slice crosswise. Trim the scallion root ends and thinly slice, keeping white bases and green tops separate. Halve the tomatoes; place in a bowl and season with salt and pepper. Zest the lime to get 1 teaspoon. Quarter the lime. Roughly chop the jalapeno. Wash hands immediately after.

Lay the shrimp in an even layer on top of the sauce; season. Loosely cover with foil and cook undisturbed 2-3 minutes until slightly opaque. Remove the foil and continue stirring occasionally 1-2 minutes until the shrimp are opaque and cooked through. Remove from heat. Stir in the juice of 2 lime wedges. Taste and season.

Add the lime zest and 2 teaspoons olive oil to the rice; season and stir. Serve the shrimp and sauce over the rice. Top with the green scallion tops. Offer the remaining lime wedges on the side.
