½ cup Brown Rice
1 each 15.5-oz can Pinto Beans
3 oz Shishito Peppers
4 oz Grape Tomatoes
¼ cup Cream
1 oz Tomato & Chipotle Flavored Butter
1 tbsp Ancho Chile Paste
2 tsp Honey
⅓ cup Crispy Onions
¼ cup Sour Cream
1 bunch Cilantro
How to make it
1
Take the butter out to soften. Rinse and drain the rice. Combine with a big pinch of salt and 1 1/4 cups water (2 1/2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 23-25 minutes until absorbed. Fluff with a fork. Stir in the softened butter.
2
Meanwhile, rinse and dry all produce. Halve the tomatoes. Remove the pepper stems and cut crosswise into 1/2-inch pieces. Wash hands immediately after. Drain and rinse the beans. Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the tomatoes and peppers; season. Cook stirring occasionally 2-3 minutes until slightly softened.
3
Add the drained beans, honey, and as much chile paste as you like. Cook stirring frequently 1-2 minutes until combined. Add the cream (shake the packet). Cook stirring frequently 1-2 minutes until combined and heated through. Serve the rice topped with the finished beans and vegetables. Garnish with sour cream, torn cilantro, and crispy onions.
