2 clove Garlic
4 oz Sweet Peppers
1 tbsp Sesame Oil
1 tbsp Soy Sauce
1 tbsp Rice Vinegar
ΒΌ tsp Crushed Red Pepper Flakes
How to make it

Combine the rice, a big pinch of salt, and 1 cup water in a small pot. Bring to a boil over high, reduce to low, cover, and cook undisturbed 12-14 minutes until absorbed. Fluff with a fork.

Rinse and dry all produce. Trim the broccoli stem and cut into small florets. Remove the pepper stems and cores; thinly slice lengthwise. Peel and roughly chop 2 garlic cloves. Slice the scallions, keeping the white bases and green tops separate.

Heat half the sesame oil in a nonstick pan over medium-high. Add the broccoli in an even layer. Cook undisturbed 2-3 minutes until lightly browned. Add 2 tablespoons water (it may spatter); season. Cook stirring occasionally 2-3 minutes until the broccoli is slightly softened and the water cooks off. Add the sliced peppers, garlic, white scallion bases, and as much red pepper flake as you like; season. Cook stirring occasionally 2-3 minutes until softened. Transfer to a large bowl and cover with foil. Wipe out the pan.

Heat the remaining sesame oil in the same pan over medium-high. Add the cooked rice in an even layer. Cook undisturbed 3-4 minutes until slightly crispy. Add the soy sauce and vinegar. Cook stirring frequently 30 seconds to 1 minute until combined. Transfer to the bowl of vegetables and stir. Taste and season. Cover with foil. Wipe out the pan.

Heat 1 teaspoon olive oil in the same pan over medium-high. Crack the eggs into the pan, keeping them separate; season. Cook 3-5 minutes until the whites are set and the yolks reach your desired doneness. Serve the fried rice topped with the fried eggs. Top with the green scallion tops.
