10 oz Cooked Farro
1 each 15.5-oz can Cannellini Beans
6 tbsp Roasted Bell Pepper Pesto
8 oz Broccoli Florets
½ oz Garlic & Herb Flavored Butter
4 oz Grape Tomatoes
½ cup Tzatziki (cucumber-yogurt sauce)
2 tbsp Sliced Roasted Almonds
2 tbsp Dried Currants
How to make it

Take the butter out to soften. Preheat the oven to 450°F. Rinse and dry all produce. Drain and rinse the beans. In a small baking dish (large for 4 servings), combine the broccoli, red pepper pesto, drained beans, tomatoes, currants, and 1/4 cup water (1/2 cup for 4 servings); season with salt and pepper and stir to combine. Dot the softened butter over the top.

Pat the chicken dry and season both sides with salt and pepper. Place on top of the vegetable and bean mixture. Roast 18-22 minutes until the broccoli is fork-tender and the chicken is browned and cooked through. Stir to combine and taste for seasoning. USDA minimum: 165°F for chicken.

Once the vegetables have been roasting about 10 minutes, cut a 1-inch vent in the farro package and microwave on high 1-2 minutes until heated through. Divide among serving bowls, drizzle with olive oil, season with salt and pepper, and stir. Top with the roasted chicken and vegetables. Finish with tzatziki and almonds.
