Preheat the oven to 450Β°F. Take the butter out to soften. Rinse and dry all produce. Pat the chicken dry; season with salt and pepper. Place in a small baking dish (large for 4 servings). Add the tomatoes, peppers (removing stems if desired), and guajillo sauce. Season, toss to coat, and arrange in an even layer. Bake 18-20 minutes until the vegetables are softened and the chicken is cooked through. Leave the oven on. Top evenly with the cheddar and Monterey Jack. Return to the oven 2-3 minutes until the cheese is melted. Let stand 2 minutes.
