Rinse and dry all produce. Halve, peel, and small dice the onion(s). Stem the peppers, halve lengthwise, seed, and medium dice. Peel and roughly chop 2 garlic cloves (4 for 4 servings).

Heat a drizzle of olive oil in a medium pot over medium-high. Add the diced onion(s) and peppers. Cook stirring occasionally 3-4 minutes until slightly softened. Add the garlic. Cook stirring occasionally 1-2 minutes until softened.
