Rinse and dry all produce. Thinly slice the mushrooms. Slice the scallions, keeping the white bases and green tops separate. In a bowl, whisk together the miso paste, bechamel, 1/4 cup water (1/2 cup for 4 servings), and as much gochujang as you like; season with salt and pepper.

Cook stirring frequently, breaking the meat apart with a spoon, 3-4 minutes until lightly browned. Drain off excess oil. Add the mushrooms and white scallion bases; season with salt and pepper. Cook stirring occasionally 2-3 minutes until lightly browned and slightly softened.
