Ingredients
2 each Boneless, Skinless Chicken Breasts
1 each Small Baguettes
6 oz Green Beans
2 oz Shredded Cheddar & Monterey Jack Cheese Blend
2 tbsp Mayonnaise
1 oz Tomato & Chipotle Flavored Butter
1 tbsp Ancho Chile Paste
¼ cup Panko Breadcrumbs
1 each Single-Use Aluminum Tray
How to make it
1
Take the butter out to soften. Preheat the oven to 450°F. Rinse and dry all produce. Snap the stem ends off the green beans. Add to the tray(s), drizzle with olive oil, season with salt and pepper, and toss to coat in an even layer on one side. In a bowl, combine the breadcrumbs, cheddar and Monterey Jack, mayonnaise, and as much chile paste as you like; season and stir.
2
Pat the chicken dry and season both sides with salt and pepper. Place on the other side of the tray(s). Top evenly with the cheesy breadcrumb mixture. Roast uncovered 18-22 minutes until the green beans are browned and fork-tender and the chicken is cooked through. USDA minimum: 165°F for chicken.
3
Once the tray has been roasting about 10 minutes, halve the baguette(s) lengthwise. Place directly on an oven rack and bake 5-7 minutes until toasted. Spread the softened butter on the cut sides. Serve the roasted chicken and green beans with the buttered bread.
