How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Peel the carrots; halve lengthwise and thinly slice crosswise. Halve the tomatoes. Peel and roughly chop 2 garlic cloves. In a bowl, combine the pesto and mayonnaise; taste and season.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the carrots in an even layer. Cook undisturbed 4-5 minutes until lightly browned. Add the tomatoes and garlic; season. Cook stirring occasionally 2-3 minutes until softened. Transfer to a bowl and cover with foil. Wipe out the pan.

Add the pasta to the boiling water. Cook stirring occasionally 8-10 minutes until tender. Drain and return to the pot.
