¼ cup Panko Breadcrumbs
3 tbsp Romesco Sauce (contains almonds)
2 tbsp Mayonnaise
1 oz Sliced Roasted Red Peppers
2 tbsp Crème Fraîche
How to make it

Take the butter out to soften. Preheat the oven to 450°F. Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Quarter and deseed the lemon(s). Halve the zucchini lengthwise and thinly slice crosswise. Roughly chop the peppers. In a bowl, combine the romesco sauce, mayonnaise, and the juice of 2 lemon wedges (4 wedges for 4 servings). Taste and season.

Pat the fish dry; season both sides with salt and pepper. Line a sheet pan with foil and lightly oil the center. Place the fish on the oiled side. Spread the softened butter on top, then press on the breadcrumbs to adhere. Drizzle with olive oil; season. Roast 8-12 minutes until the breadcrumbs are lightly browned and the fish is cooked through. USDA minimum: 145°F for fish.
