How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Trim the broccoli stem and roughly chop the broccoli. Halve the lemon and squeeze the juice into a bowl. Remove the plastic liner from the prosciutto, stack, and thinly slice crosswise.

Add the pasta to the boiling water. Cook stirring occasionally 8-10 minutes until al dente. Drain, reserving 1/2 cup pasta water.

Add the cooked pasta and half the reserved pasta water to the pan (it may spatter). Cook stirring constantly 1-2 minutes until combined. Remove from heat. Stir in the pesto, creme fraiche, and lemon juice until combined and the pasta is coated, adding more water gradually if needed. Taste and season. Serve topped with the crispy prosciutto and parmesan.
