Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Peel and roughly chop 2 garlic cloves. Shuck the corn and cut off the kernels. Halve the tomatoes. Stack the pasta sheets and cut lengthwise into 1/2-inch-wide pieces; separate carefully.

Melt the butter in a large pan over medium-high. Add the garlic and corn; season. Cook stirring occasionally 2-3 minutes until slightly softened (corn may pop). Add as much chile paste as you like; stir constantly 30 seconds to 1 minute. Add the tomatoes; season. Cook stirring occasionally 1-2 minutes until softened. Remove from heat.

Add the prepared pasta to the boiling water. Cook stirring occasionally 2-3 minutes until al dente. Drain, reserving 1/2 cup pasta water.

Add the cooked pasta, 2 teaspoons olive oil, and half the reserved pasta water to the pan of vegetables. Cook over medium-high, stirring gently, 1-2 minutes until the pasta is coated, adding more water gradually if needed. Stir in the mascarpone. Taste and season. Serve topped with romano.
