How to make it

Take the noodles out of the refrigerator. Rinse and dry all produce. Thinly slice the mushrooms. Stem the peppers, quarter lengthwise, seed, and thinly slice crosswise. In a bowl, combine the hoisin sauce, soy-miso sauce, mirin, vinegar, 1/4 cup water (1/2 cup for 4 servings), and as much sambal oelek as you like.

Heat the sauteed aromatics in a large high-sided pan over medium-high. Add the pork; season. Cook stirring frequently, breaking the meat apart, 3-4 minutes until lightly browned. Add the mushrooms and sliced peppers; season. Cook stirring occasionally 2-3 minutes until softened.

Separate the noodles by hand. Add the noodles and sauce to the pan (it may spatter); season if desired. Cook stirring frequently 2-3 minutes until combined, the meat is cooked through, and the noodles are heated through. Serve topped with sesame seeds.
