Ingredients
10 oz Pork Chorizo
½ cup Long Grain White Rice
1 each Delicata Squash
4 oz Grape Tomatoes
2 each Scallions
2 oz Shredded Cheddar & Monterey Jack Cheese Blend
¼ cup Sour Cream
⅓ cup Guajillo Chile Pepper Sauce
How to make it
1
Preheat the oven to 450°F. Rinse and dry all produce. Trim the squash and halve lengthwise; scoop out seeds and medium dice. Transfer to a small baking dish (large for 4 servings). Drizzle with olive oil, season with salt and pepper, and toss to coat in an even layer. Bake 14 minutes. Leave the oven on and remove.
2
Meanwhile, rinse and drain the rice. Combine with a big pinch of salt and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff with a fork.
3
Quarter the tomatoes; place in a bowl, drizzle with olive oil, and season. Slice the scallions, keeping the white bases and green tops separate.
4
Add the seasoned tomatoes, white scallion bases, and chorizo (torn into pieces) to the baking dish; season. Bake 12-14 minutes until the chorizo is browned and cooked through. Remove from the oven (leave oven on). Top with the guajillo sauce and cheddar and Monterey Jack. Return to the oven 2-3 minutes until the cheese is melted. Let stand 2 minutes. Serve with the rice on the side. Top with sour cream and green scallion tops.
