½ cup Jasmine Rice
2 each Scallions
10 oz Baby Bok Choy
1 each Lime
2 clove Garlic
1 tbsp Honey
1 tbsp Sesame Oil
1 tsp Black & White Sesame Seeds
1 tbsp Southern Spice Blend (Onion Powder, Garlic Powder, Ground Yellow Mustard, Smoked Paprika & Cayenne Pepper)
How to make it

Take the honey out of the refrigerator. Combine the rice, a big pinch of salt, and 1 cup water in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 12-14 minutes until absorbed. Fluff with a fork.

While the rice cooks, rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Peel and roughly chop 2 garlic cloves. Trim the bok choy root end and thinly slice. Halve the lime and squeeze the juice into a bowl.

Heat 2 teaspoons olive oil in a nonstick pan over medium-high. Add the white scallion bases and garlic. Cook stirring frequently 1-2 minutes until softened. Add the sliced bok choy; season. Cook stirring frequently 2-3 minutes until softened. Transfer to the pot of rice; stir. Cover to keep warm. Wipe out the pan.

Pat the fish dry; season both sides with salt, pepper, and enough spice blend to coat. Heat the sesame oil in the same pan over medium-high. Cook 3-4 minutes per side until browned and cooked through. USDA minimum: 145°F for fish.

Add the honey (knead the packet), green scallion tops, and sesame seeds to the bowl of lime juice; season and stir. Serve the fish over the finished rice. Top with the sauce.
