Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Drain and rinse the beans. Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the chorizo and break it apart. Cook undisturbed 3-4 minutes until lightly browned. Add the white scallion bases and drained beans; season. Cook stirring occasionally 2-3 minutes until combined. Add the guajillo or salsa sauce; stir and cook 1-2 minutes until heated through.

Serve the warmed tortillas and remaining lime wedges on the side.
