1 tbsp Sesame Oil
3 oz Baby Spinach
4 oz Mushrooms
⅓ cup East Asian-Style Sautéed Aromatics
2 tsp Gochujang
3 tbsp Roasted Garlic Onion Dressing
1 tsp Black & White Sesame Seeds
1 each Single-Use Aluminum Tray
How to make it

Position a rack in the center of the oven and heat to 450°F. Rinse and dry all produce. Rinse and drain the rice. Lightly oil the tray. Combine the spinach, rice, mushrooms (torn into pieces), sesame oil, kimchi, and half the sauteed aromatics in the tray. Add 1 cup water. Season with salt and pepper and stir thoroughly.

Cover tightly with foil and bake 30 minutes. Remove the foil (leave oven on) and stir. Make 2 shallow wells in the base. Crack an egg into each; season. Return to the oven uncovered 5-7 minutes until the whites are set and the yolks reach your desired doneness.

In a bowl, combine the dressing and as much gochujang as you like. Serve the baked tray drizzled with the sauce. Top with sesame seeds.
