How to make it

Bring a medium pot of water to a boil. Rinse and dry all produce. Cut the sweet potato into 1/4-inch rounds. Trim the scallion root ends and thinly slice on an angle, keeping the white bases and green tops separate. Peel and finely chop the ginger. Trim and thinly slice the radishes. In a bowl, combine the mayonnaise and up to half the gochujang; season with salt and pepper.

Whisk together the tempura mix and 1/4 cup cold water in a large bowl until smooth; season with salt and pepper. Heat a thin layer of oil in a large pan over medium-high. When a drop of batter sizzles immediately, coat the sweet potato rounds (let excess drip off) and add in batches in a single layer. Cook 4-6 minutes per side until lightly browned and crispy. Transfer to a paper towel-lined plate and season immediately. Wipe out the pan.

Rest a strainer over the pot of boiling water (water should not touch the strainer bottom). Add the buns in batches; cover with the lid. Steam 3-5 minutes until softened and puffy. Transfer to a work surface.

Separate and pat the sliced beef dry. Season with salt and pepper. Heat 2 teaspoons olive oil in the same pan over medium-high. Add the beef in a single layer and cook undisturbed 1-2 minutes until browned. Add the white scallion bases, ginger, black bean sauce, and as much remaining gochujang as you like; season. Cook stirring frequently 1-2 minutes until combined and the beef is just cooked through. Taste and season.

Gently open each steamed bun and spread with the spicy mayonnaise. Fill with the cooked beef and sliced radishes. Serve 2/3 of the assembled buns and 2/3 of the sweet potato tempura. Top the buns with the green scallion tops.
