1 tbsp Soy Sauce
2 tsp Gochujang
2 tbsp Mayonnaise
1 tbsp Sugar
1 tbsp Sesame Oil
1 tbsp Rice Vinegar
How to make it

Rinse and dry all produce. Thinly slice the cucumber into rounds. In a bowl, whisk together half the sugar and half the vinegar until the sugar dissolves. Add the cucumber and toss to coat. Slice the scallions, keeping the white bases and green tops separate. Peel and grate the carrots on the large side of a box grater. Core and thinly slice the cabbage. In a large bowl, combine the carrots, cabbage, green scallion tops, remaining vinegar, and half the sesame oil; season with salt and pepper. Set aside to marinate at least 10 minutes.

In a bowl, combine the beef, white scallion bases, soy sauce, remaining sugar, and remaining sesame oil; season with salt and pepper and gently mix. Form into two 1/2-inch-thick patties.

Heat a drizzle of olive oil in a pan over medium-high. Add the patties and cook 4-5 minutes per side, flipping carefully (the oil may spatter), until browned and cooked through. USDA minimum: 160ยฐF for beef. Transfer to a plate. Drain off excess oil.
