Add the ginger, onion, and half the garlic chives to the pan of pork. Cook stirring occasionally 2-3 minutes until softened and fragrant.

Add the bok choy, soy glaze, black bean sauce, creme fraiche, 1/2 cup water, and as much gochujang as you like. Simmer stirring occasionally 4-6 minutes until the sauce has thickened.

While the ragu simmers, add the rice cakes to the boiling water. Cook 2-3 minutes until tender. Drain and transfer to the pan of ragu; season. Cook stirring occasionally 2-3 minutes until thoroughly coated. Taste and season.

Divide the finished ragu and rice cakes between 2 dishes. Garnish with the remaining garlic chives.
